*Observed worker behind the coffee counter eating a protein bar. An employee may not eat, drink, or use any form of tobacco in areas where the contamination of exposed food, clean equipment, utensils, linens, etc, can result. Keep all food and drink in designated areas only. New Violation.

*Brown Rice in the Sushi area was observed holding temperatures of 80F, and worker explained that the rice was prepared the night before. Time/temperature control for safety (TCS) food must be cold held at or below 41ºF. This rice was discarded. New Violation.

There is light coming in from under the back exit door near the loading dock. New door sweeps are needed to prevent the entry of rodents and other pests. New Violation.

Sushi area is lining the bottom of the container holding the raw salmon with paper towel. All food contact surfaces must be cleanable/sanitizable to prevent the growth of microorganisms. Remove paper towel. New Violation.

Notes: For the Sushi area - Time Control Reminders: If time--rather than temperature--is used as the public health control the food shall be marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from temperature control. *Remind staff that all sinks should be set up to reflect: Wash, Rinse, Sanitize. *The Seafood department’s sanitizer compartment of the 3-compartment sink has an issues with holding water. Replace stopper. It also has a slight leak at the faucet. Work order was placed.
